CELERY FRITTERS
Ingredients for four people
400 gr. celery
4 eggs
2 tbsp. grated cheese
50 gr. chopped serrano ham
200 gr. flour
50 gr. butter
1 tbsp. baking powder
Pepper
Oil

Preparation
Wash and peel the celery. Then cut it and cook in a pot with salted water for 15 minutes. With mixer reduces the preparation of a puree and chill.
Then mix the flour with yeast, put in saucepan with water and butter, brought to the boil and remove. In this preparation add the flour and vegetables, and stir with a spatula until a thin crust.
Give a slight boil, always stirring so that the preparation does not stick. Add the celery puree, prosciutto incorporates the stay grated, salt and pepper, stir and simmer a little longer.
When the mass is apparent, remove it from heat. Finally add the eggs one at a time and mix until incorporated.
Now I: let it rest about 30 minutes preparation. Then poured the mixture in a pan with hot oil and fry fritters until golden brown. Drain and ready, serve them hot.
