Rice with vegetables
INGREDIENTS FOR 4 PEOPLE:
• 300 grams of rice
• 1 liter of vegetable broth
• 1 medium onion
• 1 green pepper
• 1 / 2 red pepper
• 1 carrot
• 1 small zucchini
• 1 small eggplant
• 100 grams of broccoli
• 1 clove garlic
• 2 tablespoons tomato sauce
• olive oil
• salt
• pepper
PREPARATION:
Peel and chop the onion and garlic in small cubes. Book. Clean the rest of the vegetables and cut into large dice. Booked separately. In a saucepan with 100 ml of hot oil, saute the onions without bringing to brown. When half cooked, add red pepper, green, carrots and broccoli. Saute well and when the sauce is almost ready, add the zucchini and eggplant, spice to taste. As soon as they are slightly cooked, add the garlic and tomato sauce. Then add rice and hot broth. Preparation Cook the quarter of an hour. Leave for a few minutes before serving.
