History of the cover

The origin of the cover and its fondness for them is not very clear. Some attribute to the king of Castile Alfonso X the author of this small pleasure because on the advice of his doctors he had to refrain from eating. So the real cooks only served him snacks.

Other sources affirm that the origin of the word tapa resides in the decree of Alfonso X according to which, because the drivers of the carriages when being thirsty drank wine on an empty stomach, the hosts were forced to serve the jars covered with some food. In this way alcohol did not cause havoc and accidents were avoided.

The Andalusians self-proclaim the origin of them because they have always eaten outdoors with a glass of sherry and to prevent insects from falling inside they covered the glass with a small lid or plate on which they placed olives, ham, fish.

However, it is most likely that the tapas come from the Arabs who left their mark mainly in Andalusia.

Ingredients for Gambas a gabardina
500 gr. of prawns (if possible from Huelva)
125 gr. of wheat flour.
100 ml. of beer.
1 egg.
1 teaspoon of chemical yeast coffee (impeller)
½ tablespoon of food coloring coffee.
For frying: sunflower oil.
Salt to taste)
